the idea that electric griddles heat evenly is a misnomer. heat is concentrated near the element and radiates out. I have used four different griddles over the years and they all have performed the same. higher heat at the element eventually discoloring the surface above the element. Even on my one month old griddle food sticks to the nonstick surface right above the element. It comes off easily but it does stick while cooking. I would love to find an electric griddle that has more element surface area for a more even heating effect. I do most of my cooking in the 300 to 350 range. I do like a griddle but nothing beats a good gas range!
